When we were looking for something super extraordinary to close out the summer season and move into fall, this coffee stood above all others. Harvested in 2022, it has been kept at its very best in a plastic GrainPro bag. The resting time has not affected the green coffee in any negative manner. We suspect the opposite; that it is even better. The aroma of the green coffee is knock you out fruity, without any special processing like anaerobic fermentation, yet shares some of the characteristics of these specially processed coffees.
A light style coffee, which has a darker than normal appearance due to the processing. This coffee is especially amazing as it rests after roasting between 7-12 days. The fruit notes become more prominent as the coffee ages (and as it cools when brewed hot). This coffee is an amazing option to try as a cold brew. Our recommendation is to brew heavier than your usual amount, with a water temperature of around 200-202 degrees Fahrenheit.

The Farm: Finca Juan Martin
Finca Juan Martin is an innovative and experimental farm owned and operated by Banexport. The goal and focus of this project are to cultivate, harvest, and process different varieties in order to develop appropriate practices for each step toward optimum coffee quality.
Located in the highest area of Sotara, just 30 minutes from Cauca's capital of Popayan, Juan Martin is dedicated to developing environmentally-conscious practices as well as providing jobs to community members with educational opportunities. Soil conservation, tree cleaning, pest monitoring, and undergrowth management around coffee trees help this model farm to set the standard for coffee care.
Finca Juan Martin also has a local mill, Manos Juntas ("hands together") is a pilot project from Banexport designed to buy local coffees in cherry form and evaluate them, reducing risk and burdens to farmers for processing the coffee. The result is a wide variety of special processing and blending of coffee cherry to produce exquisite and unique coffees from Colombia.

Mix Tape Series
Roasted exclusively in extra small 2lb batches on our Mill City 2 Kilo roaster Timbre, we are able to bring in micro lots of coffees we are excited about, but might not be as familiar as our more common line up of coffees.
These are incredible, very premium coffees offered a few times per year. They will have pronounced tasting notes, and vibrancy like you may have never experienced before. Typically, they will be a super light roast.
We only bring in small amounts, so when it’s gone, sadly, its gone. That gives you the opportunity to try something new in our mix tape series. Overall these coffees are light, bright, and full of their natural characteristics of origin.

One of the current ways we serve our home town of Topeka, KS includes promoting community and featuring local businesses through our Tasting Room Events we host in our roasting facility. We pair up a local food provider with an abundance of our coffee. Our goal in these events is to bring a large group together to celebrate being together in person, and to enjoy excellent locally produced goods and flavors. We feel this is something worth investing our time and profits in. Our world is in desperate need of more face-time with each other and overall support of our local businesses. Community Pour
Community Pour is a pop-up coffee experience we facilitate at our retail partner coffee-shop locations. 100% of proceeds will go toward a local charity chosen by our hosting shop. Our menu will consist of one non-customizable drink presentation, featuring extreme quality ingredients to create a unique one of a kind tasting experience. We will share flavors that may not make sense to offer on a regular menu, but just scream “try me”! Quality at its finest, showcasing local ingredient providers when possible, and the skills of the barista. Balanced flavors that aren’t masked by the overuse of sweeteners. All drinks will be served “dine-in” in ceramic or glass vessels to be enjoyed on premises. Meeting, greeting and deep conversations are highly encouraged! Trash Mountain Project: Coffee = Meals
Trash Mountain Project exists to develop Christ-centered environments for children and families living in trash dump communities worldwide. When you purchase a bag of Blue Jazz Coffee from any of our retail outlets, you are also paying to help feed a child in need at a trash dump community. For every two bags sold, we donate the funds to purchase a meal for the students in the Dominican Republic. In total, we have been able to provide over 200,000 meals through the program.
